Scallop and Corn Chowder

I’ve generally steered away from cooking seafood. I’ve made salmon and tuna and shrimp, etc etc… But it always scares me. I’m not sure why, but it just seems like seafood is really easy to mess up. I’m not sure where this fear came from, but there it is.

(In light of our trying to “eat local” thing, too, I should point out that there’s no way to eat local ocean seafood when you’re living in Winnipeg. Being in the exact center of the continent sort of puts the kaibash on that.)

Anyway, I came across this recipe a while ago, and it just sounded really tasty. I love scallops, and I decided to set aside my fear of them to try this recipe out.

Scallop and Corn Chowder

It was delicious. I served it alone, with no bread or anything else to go with it, so it was a nice filling dinner for two people. It was a bit fiddly, though, what with having to transfer out the bacon and scallops while everything else cooked, but it was nice only having one main cooking dish to clean up. (This was in the “one dish meals” section of the Real Simple cookbook I have.) We’ll be trying this again if we see the scallops on sale.
